For the Peanut Butter Soufflé
Instructions
-
Prepare the Ramekins
Preheat your oven to 375°F (190°C). Butter four ramekins and dust them with sugar, ensuring they are evenly coated. Tap out any excess sugar.
-
Make the Base Mixture
In a medium saucepan, combine the peanut butter, whole milk, and salt. Heat over medium heat, stirring constantly until the mixture is smooth and well combined. Remove from heat and let it cool slightly.
-
Beat the Egg Yolks
In a separate bowl, beat the egg yolks with the granulated sugar until the mixture is pale and thick. Slowly add the peanut butter mixture to the egg yolk mixture, stirring constantly. Add the vanilla extract and mix well.
-
Beat the Egg Whites
In a clean, dry bowl, beat the egg whites until they form stiff peaks.
-
Fold the Mixtures Together
Gently fold one-third of the beaten egg whites into the peanut butter mixture to lighten it. Then, carefully fold in the remaining egg whites, ensuring the mixture is well combined without deflating the egg whites.
-
Fill the Ramekins
Spoon the soufflé mixture into the prepared ramekins, filling them to the top. Run your thumb around the inside edge of each ramekin to help the soufflés rise evenly.
-
Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the soufflés are puffed and golden brown.
