For all crème brûlée lovers, we know it can be enjoyed on various occasions, from a formal dinner to a casual meal at home. Why is it so delicious?

Crème brûlée, which literally means “burnt cream” in French, has its origins in French cuisine and dates back to the 17th century. It has become popular worldwide for its combination of a crunchy caramelized sugar top and a smooth, silky custard inside. The great thing about this pistachio version is that it adds a nutty flavor and a green color that is not only delicious but also very visually appealing.

While it may seem like a complicated dessert, crème brûlée is relatively easy to prepare. With a few basic ingredients and some patience, anyone can make this delicious dessert at home. Plus, pistachios are a rich source of protein, fiber, and antioxidants. Incorporating them into a dessert offers a healthy touch that many appreciate, making the experience of enjoying it a bit less guilty.

For the Pistachio Crème Brûlée

Instructions

  1. Prepare the Ingredients

Preheat your oven to 325°F (160°C). Gather all ingredients and equipment.

  2. Heat the Cream and Milk

In a saucepan, combine the heavy cream, whole milk, and ground pistachios. Heat over medium heat until it just begins to simmer. Remove from heat and let it cool slightly.

  3. Mix the Egg Yolks and Sugar

In a mixing bowl, whisk together the egg yolks and 1/4 cup of granulated sugar until the mixture is pale and thick.

  4. Combine the Mixtures

Slowly pour the warm cream mixture into the egg yolk mixture, whisking constantly to combine. Add the vanilla extract and mix well.

  5. Strain the Mixture

Strain the mixture through a fine-mesh sieve into a clean bowl to remove any lumps and pistachio pieces.

  6. Fill the Ramekins

Divide the mixture evenly among 4 ramekins. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.

  7. Bake

Bake in the preheated oven for 40-45 minutes, or until the custards are set but still slightly jiggly in the center. Remove the ramekins from the water bath and let them cool to room temperature.

  8. Chill

Cover the ramekins with plastic wrap and refrigerate for at least 2 hours, or overnight.

  9. Caramelize the Sugar

Before serving, sprinkle 1 tablespoon of granulated sugar evenly over the top of each custard. Use a kitchen torch to melt and caramelize the sugar until it forms a crispy, golden crust.

  10. Serve

Allow the caramelized sugar to cool for a minute to harden, then serve immediately. Enjoy your delicious pistachio crème brûlée!
